Condensed Milk Pound Cake






I picked up some strawberries yesterday and wanted to make a pound cake to put them on.  So I went to Pinterest to find a recipe.  I found this recipe and had all of the ingredients in the pantry, except the vanilla bean, so I used the vanilla extract.  I also do not have a food processor, so I used my trusty hand mixer.  




Here is my version.

1 cup unsalted butter, at room temperature, plug more for greasing the pan
1 1/3 cups all purpose flour
3/4 tsp baking powder
1/2 cup sugar
2 tsp vanilla extract
1/2 tsp salt
3/4 cup sweetened condensed milk
3 large eggs

Preheat the over to 325 F.  Generously butter a loaf pan and set aside. Sift together the flour and baking powder and set aside.  Add the butter, salt and sugar mix until light and fluffy.  Add the condensed milk and mix until well incorporated.  Add the sifted dry ingredients and mix until no traces of flour remain.  Add eggs and mix just until combined.  Add the vanilla extract, and finish mixing by hand to fully incorporate the eggs.  Transfer the batter to the prepared loaf pan.  Bake until the top is dark golden brown and a tester inserted in the center comes out clean, 5-75 minutes. 


Cool completely in the loaf pan on a rack, then unmold.  Hey don't judge me on my pan.  It is a Pampered Chef loaf pan I have been using for years.  It is VERY well seasoned.

  1. Um, I think that should be renamed the 5 pound cake... thats what I'd gain eating the entire thing!! Looks great! big hugs ;-)
