Chocolate Chip Cookie Cheesecake Bars

While visiting my daughter last week in North Carolina, I made these Chocolate Chip Cookie Cheesecake Bars.  The kids loved them so I thought I would share the recipe.  I am thinking I need to make a batch and take to work.  

Ingredients:

3 (8oz) packages cream cheese, softened
3 eggs
3/4 cup sugar
1 teaspoon vanilla extract
2 (16.5-oz) rolls refrigerator chocolate chip cookie dough (keep refrigerated until needed)

Instructions:

Preheat oven to 350 degrees F
In the Classic Batter Bowl, beat together cream cheese, eggs, sugar and vanilla extract until well mixed; set aside
Slice cookie dough rolls into 1/4" slices.  Arrange slices from one roll on bottom of Stoneware 9 x 13 Rectangular Baker.  (can use standard 9 x 13 baking dish, just need to grease the bottom).   Use the Baker's Roller to press together so there are no holes in the dough.  Using the Mix N' Scraper, spoon the cream cheese mixture evenly over dough; top with remaining slices of cookie dough.
Bake 45 to 50 minutes, or until golden and center is slightly firm. 
Remove from oven and let cool on Stackable Cooling Rack  and then refrigerate.  Cut into slices when well chilled.

Chewy Butterfinger Cookies

who doesn't love cookies?  How about cookies and candy?  How about a candy cookie that is super easy to make?  




I found this recipe on Pinterest and had to give it a try.  These chewy butterfinger cookies are simple, using a basic drop cookie recipe and adding chopped butterfingers.  The candy melts in the cookies and is so good right out of the oven




Mix the flour, baking soda and salt in bow and set aside.
Cream together butter and sugar.  Then mix in the egg.  
Stir in the butterfinger pieces in by hand.  
Bake at 375 for 10-12 minutes.
Enjoy with a glass of milk.  YUM YUM!!!

Ingredients
  • 1 3/4 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/2 cup (1 stick) butter, softened
  • 1 large egg
  • 8 fun sized butterfinger candy bars, chopped
Instructions
  1. Preheat oven to 375 degrees.
  2. Combine flour, baking soda, and salt in small bowl and set aside. With an electric mixer, beat sugar and butter until creamy. Beat in egg until just combined.
  3. Gradually beat in flour mixture. Stir in butterfinger pieces by hand. Drop by slightly rounded tablespoonfuls onto ungreased baking sheet. Bake for 10-12 minutes or until lightly browned. Allow to cool and enjoy!

It's the Little Things


Sundays
It does not take a whole lot to make me happy.  I love the little things that make my day.  Today was filled with several of those.  


Lounging in my pool with a good read.  No,it is not a big swimming pool, but it does keep me cool while I am catching a few rays. Reading Fifty Shades of Grey.  Really enjoying this book.  


 Texting with my Daughter.  She made the recipe I shared last week.  Old Fashion Chocolate Cobbler  and from the looks of things, she did good.
Baking cookies.  I made these Strawberry Cake Mix Cookies and this time they were SOO much better than last time because I used the icing.  

What are the simple little things that make you happy?
